Sauerkraut Coleslaw

A lovely side summer salad with probiotics and prebiotics to support gut health.

Ingredients

2 cups of sauerkraut, homemade or store bought

1 cup zucchini, julienned

1 cup red pepper, julienned

1 cup carrots, julienned

1 tbsp dill, chopped

handful of dried cranberries

sprinkle with hemp seeds or sesame seeds

garnish with peashoots or micro herbs


Instructions

Remove sauerkraut from the brine and put in a mixing bowl. Set aside brine from dressing.

Mix remaining vegetables with the sauerkraut.

Drizzle brine over salad (about 2 tbsp worth) and toss to combine.

Garnish salad with micro greens, cranberries, dill and seeds.
