Roasted Garlic Tomato Salad

Cook Time: 1.25 hours

 

Ingredients

1 Head of Garlic

1 Tablespoon of Olive Oil

1 Tablespoon of White WIne Vinegar

1 Teaspoon Dijon Mustard

1 Tablespoon of Honey

¼ Cup of Olive Oil

Salt

1lbs of cherry tomatoes cut in half

Handful of fresh chopped basil 


Instructions:

Preheat oven to 375°f. Wrap the garlic and 1 Tablespoon of oil in foil and roast in the oven for 1 hour until soft. Remove and leave to cool. Remove the flesh from the garlic by squeezing out the roast garlic. Add the ¼ cup oil, vinegar, mustard, salt and honey, mix well. Whisk until it becomes thick. Taste and season as necessary, adding more vinegar if needed. 

Place the tomatoes in a bowl and pour over the dressing and toss to coat. Top with some of the fresh basil and serve immediately.
