Don't let the stalk of the broccoli go to waste! It has all the nutrients that the tops do. Peel the outer tough part of the stalk away and use the tender part to make this lovely soup.

Ingredients4 potatoes, peeled and cut into chunks 1 onion, peeled and roughly chopped 2 carrots, peeled and chopped into chunks 2 cups vegetable broth Leftover broccoli stalks, about ¾-1 cup (outer tough skins removed) ½ tbsp fennel seeds (or other spices you like) Salt Black pepper |

Instructions:1. Put the potatoes, onion, and carrots in a large pan and add vegetable broth. Add additional water if needed to just cover the vegetables. 2. Bring to the boil and reduce the heat and simmer for about 10 minutes. 3. Add the broccoli stalks, fennel and vegetable stock and continue to cook until all the vegetables are just tender. 4. Take off the heat and allow to cool a little before pouring into a blender and pureeing until smooth. 5. Taste, season and enjoy. |
